Thanksgiving Keto Pumpkin Pie!

Here's a keto-friendly pumpkin pie recipe for your Thanksgiving

Ingredients:

For the crust:

- 1 1/2 cups almond flour

- 1/4 cup powdered erythritol or your preferred keto-friendly sweetener

- 1/4 cup melted butter

- 1 egg

- 1 tsp vanilla extract

- A pinch of salt


For the filling:

- 15 oz canned pumpkin puree

- 2 large eggs

- 1/2 cup heavy cream

- 1/2 cup powdered erythritol or your preferred keto-friendly sweetener

- 1 tsp ground cinnamon

- 1/2 tsp ground ginger

- 1/4 tsp ground nutmeg

- 1/4 tsp ground cloves

- A pinch of salt


Instructions:

1. Preheat your oven to 350°F (175°C).

2. For the crust, combine almond flour, powdered sweetener, melted butter, egg, vanilla extract, and a pinch of salt in a bowl. Mix well until a dough forms.

3. Press the dough into a 9-inch pie pan, ensuring an even layer on the bottom and up the sides. You can use a fork to create a decorative edge.

4. For the filling, in a large mixing bowl, whisk together pumpkin puree, eggs, heavy cream, sweetener, spices, and a pinch of salt.

5. Pour the filling into the pie crust, spreading it out evenly.

6. Bake in the preheated oven for about 45-50 minutes, or until the center is set and a toothpick inserted comes out clean.

7. Allow the pie to cool completely before serving.

8. Optionally, top with whipped cream (using keto-friendly sweetener) or a dollop of mascarpone cheese.
